Tomato rice recipe prepared in a pressure cooker(for two persons) –
Ingredients required for tomato rice –
2 cup of raw rice(for better result use aged Basmati rice or other who gives every seed free and separate texture)
1 cup of chopped tomato, or you can use 1 cup of tomato purée.
1/2 cup of finely chopped onion
5 green chilies
4 pieces of cinnamon, star anise, bay leaf, black pepper, clove, black cardamom each
1 tablespoon of cumin seeds,
1/2 tablespoon of turmeric
2 tablespoons of red chili powder
3 tablespoons of edible oil or ghee
Salt to taste
how to make tomato rice in a pressure cooker?-
Preparation process of tomato rice in a pressure cooker(for two persons)-
1. Clean and wash raw rice twice. Soak rice for half an hour. Add water to the rice, two of the rice quantity. Cover and keep the rice for rest.
This will help you cook rice fast. And the rice will be soft and each sage free from the other. So, the first step of soaking your raw rice is very important.
2. Turn on the gas and flame it on. Now put the cooker on the gas. When the cooker gets heated, add three tablespoons of edible oil or ghee. When oil or ghee gets heated, add 1 tablespoon of cumin seeds to the oil. When cumin seeds crackle, add other spices, cinnamon, star anise, bay leaf, black pepper, clove, and black cardamom to it. Now lower the flame.

3. Now, add finely chopped 1/2 cup of onion and 4-5 chilies that are cut into two pieces from the center to the spices tempering. Now higher the flame to medium flame. Stir well all

4. Once your tempering starts realizing oil add a cup of finely chopped tomatoes or a cup of tomato purée to it. Remember, tomato is here main ingredient. So, you can not avoid it.

5. Now turn the gas flame to high. Stir the mixture of tomato and tempering well for the next five minutes. Once you roast the tomato mixture on a high flame, it will give you a fresh, tangy aroma and taste. Now lower the gas flame and stir the mixture til it releases oil from the sides. Let the tomatoes cook well in oil and become soft.
6. Now add 1/2 teaspoon of turmeric powder to the mixture. Turmeric powder gives a savory touch to tempering and also provides a beautiful color to the rice. Stir the mixture well. Turmeric has very good antioxidant benefits, so it will be healthy to use turmeric while you cook something.
7. Now your tempering is ready, and it’s now a pre-use mixture; you can store it in the fridge for 5-6 days. And whenever you want to make tomato rice, you can just do the further procedure.

8. Now, once your tempering is ready to further process, you move next step. Tomato rice is a spicy type of rice. So, add 2 tablespoons of red chili powder to the mixture. Stir the mixture on a low flame. You can make use of 1 tablespoon of spice mixed chili powder and 1 tablespoon of plain Kashmiri chili powder.
